ginger crinkles

mix 1 cup butter
and 1 3/4 cup sugar
add 1 egg
and 1/3 cup molasses
mix 2 3/4 cup flour
1 3/4 tsp cinamon
1 3/4 tsp ginger
1 1/2 tsp baking soda
1/2 tsp salt
add to liquid ingredients
spoon onto baking trays and sprinkle lightly with sugar.
bake on 350* for 10-12 min

za'atar

1/4 cup sumac
1/4 cup toasted sesame seeds
2 tbsp dried thyme
2 tbsp dried oregano
2 tsp salt

coconut lime chicken salad

mix 1 cup coconut milk
1/4 cup lime
2 tbsp brown sugar
1/2 tsp salt
put 1/4 cup of dressing in a bowl and pour the rest over chicken strips.
bake for 20 min.

mix 4 cups shredded lettuce in bowl with dressing
1 cup shredded cabbage
1 cup sliced snow peas
3 tbsp cilantro
2 tbsp minced onion
add chicken and 2 tbsp cooking liquid

ginger apple stir fry

heat 2 tsp sesame oil
add 2 cloves minched garlic
2 tbsp minched fresh ginger for 30 seconds
slice 1 pepper
10 mushrooms
4 scallions and all to stove
mix 1/3 cup applesauce
1/3 cup stock
2 tbsp soy sauce
2 tbsp apple cider vinegar
1 tbsp cornstarch
cook till thick and clear
add 2 sliced apples
(the original recipe says to add chicken breast strips but i find it has alot more flavor if i use regular chicken with skin and bones and pour the sauce onto the chicken. bake at 350* for an hour or until chicken is cooked.)

cooking light banana bread

whisk 2 cups flour
3/4 tsp baking soda
1/2 tsp salt
beat 1 cup sugar
1/4 cup butter
add flour mixture
add 2 eggs
add 1 1/2 cups banana
1/3 cup plain yogurt
1 tsp vanilla

bake for 1 hour in 350*. cool for 10 minutes

***i make this all the time its sooo good and healthy too!

lamingtons

mix 4 eggs
2 cups sugar
mix 2 cups flour
4 tsp baking powder
pinch salt
add to egg mixture
heat 125g margarine
1 cup milk
quickly add to mixture
add 1 tsp vanilla
pour in greased dish and bake 30-40 min in 180* celcius oven.

frosting-
3/4 cup boiling water
1 3/4 cup icing sugar
2 1/2 tbsp cocoa
75 g margarine
1 1/2 tsp vanilla
mix all ingredients on stove

remove edges of cake. cut cake in squares. remove top. cut cake in half (like a sandwich) and put jelly on. close cake and dip in frosting and than in coconut.

french roast

4-5 pound roast
3 chopped onions
3 chopped cloves garlic
1 cup firmly packed brown sugar
1 cup ketchup
1 cup water
3/4 cup balsamic vinegar
2 tsp soy sauce
2 tsp apricot preserves

combine all ingredients (besides meat) in a saucepan and bring to boil. reduce heat ans simmer until sugar dissolves. pour marinade over roast, cover, and refrigerate 8 hours or overnight, turning occasionally.
preheat oven to 350*.
bake covered for 2 hours.

surprise roast

**you've definitely had this before- yudi makes it. its yum.
3 pound roast
3 tbsp onion powder
3 cloves garlic- peeled and minced
1 tbsp paprika
1 cup salsa
1 can coke

350* oven. rinse roast. mix the seasonings with a bit of water, and rub the wet roast on all sides.
put in roasting pan. bake for 1 hour than turn over and pour salsa and coke on top of meat.
roast for another 2 1/2 hours or until tender.
if meat is dry, add another 2 tbsp salsa and 1/2 cup coke.
while meat is cooking, turn every now and then so it absorbs the flavor.

sticky ribs

2 pounds ribs

1/2 cup ketchup
1/4 cup honey
2 tbsp soy sauce
2 tbsp balsamic vinegar
1 tbsp brown sugar
1 tsp mustard

bake at 200* celcius for 1 hour

plain roast

** i havent tried any of these roast recipes, but gish, here are some that i WOULD try and that look good.
1 pound roast
paprika
1 tbsp olive oil
4 cloves garlic- peeled and minced
3 cups water
5 stalks celery- cut into 3 inch pieces
1 pound green beans, or any fresh of frozen vegetable
1/4 tsp turmeric (optional)
salt and pepper

rub meat liberally with paprika and set aside. heat oil in saucepan and saute garlic for about a minute, than add meat and brown.
add water and cook covered for about 90 minutes, until done. cool.
(try to cook the meat a day in advance so the meat juices gel (fat) so it can be removed. wrap meat in foil pour stock into a container. refrigerate.
slice cold meat into thin slices. put celery and green beans in a pot along with the stoch.
arrange meat slices on the veggies and sprinkle spices on top. cook covered on low for another 90 minutes until meat is very tender. add water if necessary.

just fyi, if you dont know how much meat to get, they say you should get around 250 grams per person which is just under 1/2 pound.

Lamb Satay

mix 1 tbsp peanut butter
1/2 cup coconut milk
1 clove minced garlic
1 tsp curry powder
1 1/2 tsp brown sugar
1/2 tsp salt
1/2 tsp pepper
add lamb and marinade for at least 2 hours.

peanut sauce-
1 cup coconut milk
1 tbsp curry powder
1/2 cup peanut butter
3/4 cup chicken or vegetable stock
1/4 cup brown sugar
simmer for 5 minutes. remove from stove and add
2 tbsp lemon or lime juice
1 tsp soy sauce

** you can make this with chicken or beef too but the butcher had none left so i made it with beef. if you dont like spicy, make sure the curry powders not a spicy one. its excellent!

Spinach noodle kugel

1 package egg noodles, cooked and drained
Spinach, about 3/4 of a bag, chopped or shredded by hand
4 eggs (works also with 3, if you want to cut down, or with 2 eggs and 2 whites)
1.5 cups nondairy creamer (or cream or milk)
Onion soup mix, half a bag of the regular or a full bag of the low-sodium variety
Half a stick of melted butter or margarine (or, I generally use less and supplement with olive oil)
Can of sliced mushrooms (optional)
Salt and pepper to taste

Preheat oven to 350. Grease a 12'' x 9'' Pyrex or tin. Combine all the ingredients and mix well. Pour into Pyrex or tin. Cook covered for 40 minutes, uncover and cook another 15 minutes or until top is lightly browned.

Roasted Chickpeas

drain a can of chickpeas
sprinkle on wtvr spices- pepper, garlic powder, onion powder, paprika, chilli powder, hot paprika and parsley flakes
spread into an even layer and bake abt 20 minutes uncovered on 375

** I haven't made this yet but it looks good.

lamb curry

500g lamb- cubed
1 tbsp evoo
1 onion
2 cloves garlic
1 tsp fresh grated ginger
1 small tin crushed tomatoes
1 cup coconut milk
2/3 tbsp curry powder
1 1/2 c stock
1 tbsp flour (or cornstarch)
salt and pepper

sautee onion, garlic, meat, n curry
add all else and simmer till meat is soft
serve with basmati rice

** I made this for dinner tonight. We finished the whole pot! It was so easy and absolutely delicious!
